Recipe: Salmon Avocado Boats

Are you craving something savory, creamy but also filling? Here is a super easy and quick recipe for lunch or dinner that you and your family can enjoy any day of the week. Keep in mind that this recipe will work with whatever protein you desire. This dish is best served chilled.  

Ingredients: 

  •  ½ cup nonfat plain Greek yogurt  
  • ½ cup diced celery 
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lime juice 
  • 2 teaspoons mayonnaise 
  • 1 teaspoon Dijon mustard 
  • ⅛ teaspoon salt 
  • ⅛ teaspoon ground pepper 
  • Chopped chives for garnish 
  • 2 avocados 
  • 2 (5 ounce) cans salmon, drained, flaked, skin and bones removed

 Directions:  

  1. Combine celery, parsley, yogurt, lime juice, mayonnaise, mustard, salt, and pepper in a large container mixed until combined.  
  2. Cut avocado lengthwise and remove pits, scoop about 1 tbsp of avocado, put in a small bowl and mash with salmon until combined.
  3. Combine the mixtures and then 1/4 cup of the salmon mixture inside the avocado, mounding it on top of the avocado halves.  

 

Alternative Serving Options: spread on top of your favorite whole grain toast
