Meaningful in May: NVIH’s May Events & Initiatives

As we welcome May—nationally recognized as Mental Health Awareness Month—we reaffirm our commitment to fostering education, support, and dialogue around mental well-being. This month also includes key observances such as Maternal Mental Health Week, National Women’s Health Week (May 11–17), and Dementia Awareness Week (May 19–25), all of which highlight the importance of proactive and inclusive health care. 

We also take time to honor the National Day of Awareness for Missing and Murdered Indigenous Women, Girls, and Two-Spirit People (MMIWG2S) on May 5. We invite everyone to wear red in solidarity with NVIH staff observing this important day as part of our continued effort to raise awareness and support healing within our communities. 

Reflecting on the past month, our team proudly organized a series of health fairs across Chico, Woodland, Willows, and Grindstone. These events were a testament to the exceptional dedication of our staff and the invaluable support of our community partners. I extend my heartfelt gratitude to all who contributed to their success.

Lemon Lentil Salad with Feta

Don’t know what to make for lunch or dinner? Here is a quick and easy, low calorie/high fiber recipe. This will be a staple on your table for lunch or dinner — healthy and fresh!

Enjoy! 

 

Ingredients 

  • ⅓ cup lemon juice 
  • ⅓ cup chopped fresh dill 
  • 2 teaspoons Dijon mustard 
  • ¼ teaspoon salt, or to taste 
  • ⅓ cup extra-virgin olive oil 
  • Freshly ground pepper, to taste 
  • 2 15-ounce cans lentils, rinsed, or 3 cups cooked brown or green lentils 
  • 1 cup crumbled feta cheese, (about 4 ounces) 
  • 1 medium red bell pepper, seeded and diced (about 1 cup) 
  • 1 cup diced seedless cucumber 
  • ½ cup finely chopped red onion 

Directions 

  1. Whisk lemon juice, dill, mustard, salt and pepper in a large bowl. Gradually whisk in oil. Add lentils, feta, bell pepper, cucumber and onion; toss to coat.   

 

Make Ahead Tip: The salad will keep, covered, in the refrigerator for up to 8 hours.
