September 2006 | Practically Perfect Picnic Salad
Here in California we still have a month of warm weather. This is a unique and delicious warm weather salad to share at a picnic or to enjoy as a light lunch.
Ingredients
- One 15-ounce can white beans, drianed, or 2 cups cooked dry white beans
- 1 cup seedless grapes, sliced in half
- 1 cup celery, diced
- 1/2 cup green onions, chopped
- Lettuce leaves
- Lemon Mustard Dressing:
- 2 tablespoons vegetable oil or olive oil
- 2 tablespoons lemon juice
- 1 Dijon-style mustard
- Dash salt and pepper (if desired)
Instructions
- Combine beans, grapes, celery, and onions in a bowl.
- In a small container add ingredients for dressing and mix well.
- Pour dressing over the bean salad and toss.
- Serve over lettuce leaves and enjoy!
