October 2006 | Microwave Baked Apples with Cinnamon Cream
Everyone loves this one! Leave the apple skins on for extra fiber.
Ingredients
- Granny Smith apples (one for each person)
- Ground Cinnamon
- Filling for 4 apples:
- 1/4 cup chopped walnuts or pecans
- 1/4 cup dried cranberries or raisins
- Cinnamon Cream Sauce:
- 1/2 cup fat free sour cream
- 1 tablespoon honey or Splenda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
Instructions
- Core apples leaving the body intact.
- Mix nuts and dried cranberries and spoon mixture into apple cavity. Sprinkle apples with cinnamon as desired.
- Microwave apples individually or in pairs until apples are tender (1 to 3 minutes depending on your microwave).
- Mix cream sauce ingredients and spoon over the warmed apples.
- Serve and enjoy!
