From Better Homes and Gardens New Diabetic Cookbook: Big, meaty pork chops pair well with full-flavored ingredients. This lime and chili powder marinade is just the ticket. Add more or less of the hot pepper sauce to suit your taste.
Ingredients
- 4 boneless pork loin chops, cut 1/2 inch thick (about 1 pound total)
- 1/4 cup lime juice
- 2 tablespoons chili powder
- 1 tablespoon olive oil
- 1 clove garlic
- 1.5 teaspoons ground cumin
- 1.5 teaspoons ground cinnamon
- 1/2 teaspoon bottled hot pepper sauce
- 1/4 teaspoon salt
Instructions
Prep time: 15 minutes, Marinate: 4 to 24 hours, Broil: 6 minutes
- Place chops in a plastic baag set in a shallow dish. For the marinade, in a small bowl stir together the lime juice, chili powder, olive oil, garlic, cumin, cinnamon, hot pepper sauce, and salt. Pour over chops. Close bag. Marinate in refrigerator for 4 to 24 hours, turning the bag occasionally. Drain chops, discarding marinade.
- Place chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 6 to 8 minutes or until no pink remains and juices run clear, turning once.
