May 2009 | Stuffed Avocados
This is a traditional Peruvian recipe called Palta Rallena. It is quick to make and delicious. Avocados are loaded with heart healthy mono-unsaturated fats!
Ingredients
- 2 ripe avocados
- 1/2 onion, chopped
- 2 tomatoes, chopped
- 2 hard-boiled eggs, chopped
- 4 ounce cooked chicken, chopped
- 2 tablespoons light mayonnaise (Bestfoods makes a tasty light mayo)
- Salt (optional) and pepper to taste
Instructions
- Cut the avocados in half, remove the pits and scoop out a little of the flesh around the holes into a small mixing bowl.
- Add the remaining the ingredients to the bowl and mix gently but thoroughly.
- Pile the chicken mixture into the center of each avocado half. Serve immediately.
Serves four.
