May 2007 | Bowtie Chicken Caesar Salad
This is a great salad to bring to a backyard barbeque or serve as a light lunch. You may also make this salad vegetarian by using one of the vegetarian chicken substitutes sold in most grocery stores.
Ingredients
- 10 ounce bag bow tie pasta
- 2 cooked chicken breasts or 2 cups leftover chicken, skin removed and cubed
- 1 bunch spinach, thoroughly rinsed
- 1/2 cup shredded carrot
- 1/4 cup shredded parmesan cheese
- 1/3 cup reduced fat Caesar dressing
Instructions
- Cook pasta according to instructions.
- Drain and rinse under cold water.
- In a large bowl combine pasta, chicken, vegetables, and parmesan. Add dressing and toss until well coated.
- Chill before serving.
Makes 10 servings.
