May 2006 | Chilled Strawberry Apricot Soup

Ingredients
- 2 cups strawberries, washed and hulled
- 1 cup ripe fresh apricots, cubed
- 1 cup sugar-free, fat-free vanilla yogurt
- 2 teaspoons sugar
- 2 teaspoons lemon juice
- 2 teaspoons fresh minced mint
- 1/4 teaspoon cinnamon
Instructions
- In a food processor or blender, combine the fruit.
- Process until smooth.
- Transfer to a bowl and fold in the remaining ingredients.
- Cover and refrigerate for four hours before serving.
