Ingredients
- 1 can of corn, drained
- 1 can of beans, drained
- 1 can of tomatoes, drained
- 1 small can of sliced olives, drained
- 1 small can diced mild green chilies
- 1/2 small onion, chopped
- 1/2 cucumber, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chipotle powder or taco seasoning mix
- 1/4 teaspoon black pepper
- 1/4 cup low-fat salad dressing of choice
- 2 avocados, peeled, pitted, and diced
- 1 package medium whole wheat tortillas
Directions
In a large bowl, mix together corn, beans, tomatoes, olives, green chilies, cucumber, and onion. Add the spices. Pour salad dressing over mixture and toss to coat. Gently mix in the avocados right before serving. Divide mixture evenly into whole wheat tortillas and roll into a wrap.
