June 2007 | Chicken Tacos with Mango Salsa

Try this healthy version of an old favorite. The mango salsa adds a delicious zing that gets rave reviews every time.

  1. Preheat oven to 350 degrees. Coat a baking pan with cooking spray. Put chicken in the pan and season with garlic, onion and chili powder. Cover and bake chicken for 30 minutes or until cooked through and juices run clear.
  2. In a bowl mix together mango, onion, jalapeño, cilantro and lime juice.
  3. Put cabbage, avocado, and mango salsa in serving dishes and let each person fill their own tortilla. Top with light sour cream and enjoy.

Makes 8 tacos.
