January 2010 | Hearty Vegetarian Chili
Ingredients
This quick and delicious chili gets its protein from beans with none of the saturated fat and cholesterol that come from adding ground meat. This is a heart healthy chili that will provide a hearty satisfying meal.
- 1 small onion, chopped
- 1 bell pepper, diced
- 2 carrots diced
- 1 jalapeño, seeded and diced (optional)
- 1 tablespoon olive oil
- 1 (15 oz.) can kidney beans
- 1 (15 oz.) can pink beans
- 1 (8 oz.) can tomato sauce)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder (you can add more for extra spice)
Directions
- In a pot, saute the onion, bell pepper, carrot, and jalapeño in oil over medium heat until tender.
- Add beans, tomato sauce, and spices. Add more spices if it suites your tastes, cover and simmer over low heat for 25 minutes.
- Top each serving with a dollop of low-fat sour cream if desired and serve with corn bread.
Makes six servings.
