Ingredients

This quick and delicious chili gets its protein from beans with none of the saturated fat and cholesterol that come from adding ground meat. This is a heart healthy chili that will provide a hearty satisfying meal.

Directions

  1. In a pot, saute the onion, bell pepper, carrot, and jalapeño in oil over medium heat until tender.
  2. Add beans, tomato sauce, and spices. Add more spices if it suites your tastes, cover and simmer over low heat for 25 minutes.
  3. Top each serving with a dollop of low-fat sour cream if desired and serve with corn bread.

Makes six servings.
