January 2007 | Beef Goulash Soup

From Better Homes and Gardens New Diabetic Cookbook: Unsweetened cocoa powder adds a unique rich flavor to this variation of Hungarian goulash. Don’t be surprised if your family asks for this soup time and time again.

  1. Trim fat from beef. Cut beef into 1/2-inch cubes. In a large saucepan heat olive oil over medium-high heat. Cook and stir beef in hot oil over medium-high heat about 6 minutes or until beef is browned. Add onion wedges; cook and stir about 3 minutes or until tender.
  2. Stir in the water, beef broth, undrained tomatoes, carrot, cocoa powder, and garlic. Bring to boiling; reduce heat. Simmer about 15 minutes or until beef is tender. Stir in the cabbage, noodles, and paprika. Simmer for 5 to 7 minutes more until noodles are tender but firm. Remove from heat; stir in sour cream until combined.
