From Better Homes and Gardens New Diabetic Cookbook: Unsweetened cocoa powder adds a unique rich flavor to this variation of Hungarian goulash. Don’t be surprised if your family asks for this soup time and time again.
Ingredients
- 6 ounces boneless beef sirloin steak
- 1 teaspoon olive oil
- 1 medium onion, cut into thin wedges
- 2 cups water
- 1 14.5-ounce can beef broth
- 1 14.5-ounce can low-sodium tomatoes, undrained and cut up
- 1/2 cup thinly sliced carrot
- 1 teaspoon unsweetened cocoa powder
- 1 clove garlic, minced
- 1 cup thinly sliced cabbage
- 1 ounce dried wide noodles (about 3/4 cup)
- 2 teaspoons paprika
- 1/4 cup fat-free dairy sour cream
Instructions
- Trim fat from beef. Cut beef into 1/2-inch cubes. In a large saucepan heat olive oil over medium-high heat. Cook and stir beef in hot oil over medium-high heat about 6 minutes or until beef is browned. Add onion wedges; cook and stir about 3 minutes or until tender.
- Stir in the water, beef broth, undrained tomatoes, carrot, cocoa powder, and garlic. Bring to boiling; reduce heat. Simmer about 15 minutes or until beef is tender. Stir in the cabbage, noodles, and paprika. Simmer for 5 to 7 minutes more until noodles are tender but firm. Remove from heat; stir in sour cream until combined.
