February 2010 | Southern Beans and Greans
Ingredients
This traditional Southern combination creates a healthy and hearty dish with a heavenly blend of flavors and surprisingly meaty texture. Serve it with warm corn bread.
- 1 cup vegetable broth
- 3 cups drained cooked or canned beans (your choice of any kind)
- 2 cloves garlic, minced
- 4 cups chopped fresh kale or spinach
- 1 teaspoon olive oil
- Black pepper, to taste
- Tabasco sauce, to taste
Directions
- Combine beans, broth, and garlic in a large saucepan and bring to a gentle boil. Cover, reduce heat to low, and simmer about 20 minutes. Add oil and greens and simmer until the greens are wilted another 5-10 minutes. Remove from heat and add black pepper and tabasco sauce to taste.
