December 2009 | Cranberry Crunch Joy Balls
Ingredients
A delicious yet nutrient rich holiday dessert, these joy balls get their yummy goodness from natural unprocessed ingredients. They are quick and easy to make, require no cooking, and are ideal for holiday parties and gifts.
- 1 cup almonds
- 1 cup walnuts or pecans
- 1 cup sunflower seeds
- 1.5 cups dried cranberries
- 1/2 cup dried dates
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/2 cup coconut flakes
Directions
- Place the nuts and sunflower seeds in a food processor and pulse until coarsely ground. Add the dried cranberries and dates and pulse a few more seconds, then add the maple syrup, vanilla, and nutmeg. Continue to pulse until the mixture will stick together. Roll into small 1-inch balls then roll each ball in the coconut flakes. Keep in an air tight container to store.
