December 2008 | Wild Rice Stuffing
This is a delicious sweet and savory wild rice stuffing. It is the perfect side dish for your holiday meal.
Makes six servings.
Ingredients
- 1 tablespoon butter
- 1/2 medium yellow onion, finely chopped
- 4 celery stalks, finely chopped
- 2 cups cooked wild rice mix
- 1 tablespoon minced parsley
- 1 teaspoon dried thyme
- 2/3 cup pecans, finely chopped
- 1/4 cup dried cranberries
- Salt (optional) and pepper to taste
Instructions
- Melt butter in a large skillet over medium heat. Add the onion and celery and cook, stirring occasionally, until just softened, about five minutes. Stir in rice, parsley, and thyme and cook until just fragrant, about one minute. Add pecans and cranberries. Heat through and serve.
