December 2006 | Sweet Potato Casserole
This holiday side dish is so good you’ll want to eat it year round. Sweet potatoes are an excellent source of vitamin A (from beta carotene) and also provide vitamin C, essential minerals, and fiber. They’re delicious and nutritious!
Ingredients
- 6 sweet potatoes
- 1 cup pitted dates, chopped
- 1 cup crushed pineapple with juice
- 1/4 cup light brown sugar
- 3/4 teaspoon ground cinnamon
- 2 tablespoons lemon juice
- 1/4 cup butter, melted
Instructions
- Boil sweet potatoes in water for 30 minutes or until tender. Drain, cool, and cut into 1/4 inch slices.
- In a bowl, combine pineapple, brown sugar, cinnamon, lemon juice, and melted butter.
- In a casserole dish, arrange alternating layers of potatoes and dates spooning pineapple mixture over each layer.
- Bake at 350 degrees Fahrenheit for 45 minutes, basting occasionally with liquid in casserole dish.
For those with high cholesterol try substituting Smart Balance or other "heart smart" spread for butter.
