August 2011 | Grilled Mahi Tacos

Fish tacos made on an outdoor grill are perfect for summer dinners. These tacos are healthy and delicious.

Ingredients

Directions

  1. Cut fish into long, 1-inch wide strings for tacos and marinate in teriyaki sauce for a couple of hours before grilling.
  2. Cook fish on a medium hot grill or barbeque until completely cooked through, about 3 minutes on each side.
  3. Layer fish, shredded cabbage, mango salsa, and avocado in warm tortillas. Give a squeeze of lime and enjoy! For extra zing, try topping these tacos with a little bit of low-fat ranch dressing or plain yogurt.

Makes 8 tacos.

* Hydrogenated oils, partially-hydrogenated oils and shortening contain unhealthy trans fat and should be avoided. Look for wheat tortillas made with liquid vegetable oils.
