August 2011 | Grilled Mahi Tacos
Fish tacos made on an outdoor grill are perfect for summer dinners. These tacos are healthy and delicious.
Ingredients
- 1 pound Mahi Mahi filets, preferably fresh
- 1 cup teriyaki sauce
- 2 cups shredded cabbage
- 1 cup mango salsa (recipe below)
- 1-2 ripe avocados depending on size, pitted and sliced
- 8 6-inch corn or wheat tortillas made with NO hydrogenated oils or shortening*
- Lime wedges
Mango salsa
- 1 large ripe mango, skinned and diced
- 1/2 small red onion, diced
- 1 jalapeno, diced (seeds removed for less heat)
- 2-3 tablespoons finely minced fresh cilantro
- Juice of 1 line
- Mix together all ingredients in a bowl
Directions
- Cut fish into long, 1-inch wide strings for tacos and marinate in teriyaki sauce for a couple of hours before grilling.
- Cook fish on a medium hot grill or barbeque until completely cooked through, about 3 minutes on each side.
- Layer fish, shredded cabbage, mango salsa, and avocado in warm tortillas. Give a squeeze of lime and enjoy! For extra zing, try topping these tacos with a little bit of low-fat ranch dressing or plain yogurt.
Makes 8 tacos.
* Hydrogenated oils, partially-hydrogenated oils and shortening contain unhealthy trans fat and should be avoided. Look for wheat tortillas made with liquid vegetable oils.
