August 2009 | Skinny Shrimp Scampi
A lower fat, lower calorie shrimp scampi that is still BIG on taste.
Ingredients
- 1 tablespoon olive oil
- 2 pounds large shrimp, cleaned and shelled
- 2 or more garlic cloves, minced
- 1/4 cup chopped shallots or red onion
- 3 tablespoons dry sherry or white wine (optional)
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon lemon zest
- 1/4 cup chopped fresh basil
- 4 tablespoons low-fat tub margarine
- 4 cups cooked spaghetti (try whole wheat noodles!)
- Salt (optional) and pepper to taste
Instructions
- In a large skillet heat olive oil and cook shrimp until they turn opaque in color. Remove from skillet and set aside.
- Add the garlic and shallots and cook until tender about 3 minutes; add the sherry lemon juice, zest, and basil and heat for another minute. Stir in the margarine and turn off the heat when just melted.
- Add the shrimp and pasta to the skillet and toss to coat. Add optional salt and pepper and serve immediately.
Makes six servings.
