A lower fat, lower calorie shrimp scampi that is still BIG on taste.

  1. In a large skillet heat olive oil and cook shrimp until they turn opaque in color. Remove from skillet and set aside.
  2. Add the garlic and shallots and cook until tender about 3 minutes; add the sherry lemon juice, zest, and basil and heat for another minute. Stir in the margarine and turn off the heat when just melted.
  3. Add the shrimp and pasta to the skillet and toss to coat. Add optional salt and pepper and serve immediately.

Makes six servings.
