For May 2012: Asian Coleslaw
This simple yet deliciously flavorful coleslaw is a more sophisticated version of the old picnic staple.
Ingredients
- Half of a purple cabbage, thinly shredded
- 2 large carrots, shredded
- Quarter cup thinly sliced green onion (use white and green parts)
- 3 tablespoons reduced-fat mayonnaise
- 3 tablespoons sesame oil
- Quarter cup seasoned rice vinegar
- Quarter teaspoon each of salt (optional) and pepper
Directions
- Add vegetables to a large bowl.
- Add dressing ingredients and mix well until dressing is evenly distributed throughout.
- Cover and chill for at least one hour so cabbage wilts and flavors meld. It is even better if left chilling overnight. Pour off extra water that the cabbage weeps before serving.
Makes 8 servings.
