For July 2010: Tuna Apple Salad

Ingredients

This is a deliciously unexpected lighter version of traditional tuna salad made with mayonnaise. Stuffed in a pita pocket or between toasted whole grain bread it makes a delightful summer lunch.

Directions

  1. In a small bowl, stir tuna, onion, apple, celery and two tablespoons of dressing together.
  2. In another bowl toss salad greens with remaining dressing.
  3. Carefully open pita breads and fill with equal amounts of tuna mixture and greens.
