For July 2010: Tuna Apple Salad
Ingredients
This is a deliciously unexpected lighter version of traditional tuna salad made with mayonnaise. Stuffed in a pita pocket or between toasted whole grain bread it makes a delightful summer lunch.
- 2 (5 oz) cans water packed tuna, drained
- 2 tablespoons minced red onions
- 1 apple cored and chopped
- 1/4 cup chopped celery
- 5 tablespoons fat free or low fat Italian dressing
- 2 cups salad greens
- 2 pita breads, cut in half
Directions
- In a small bowl, stir tuna, onion, apple, celery and two tablespoons of dressing together.
- In another bowl toss salad greens with remaining dressing.
- Carefully open pita breads and fill with equal amounts of tuna mixture and greens.
